Il Caggio

IPSUS is born from the perfect combination of a land ideal for growing Sangiovese vines and the passion of a noble family dedicated to the art of winemaking since 1435. IPSUS has a distinguished power which represents its own unique terroir, Il Caggio. Fine and silky tannins are combined with red berries, cherries and the aromas of blood orange peel. Touches of violet, roses and lavender are seasoned with delicate spices and crushed stones. IPSUS, with its tightly-wound texture and long, savoury finish, is an electrifying wine.

Vintage 2018 began with a dynamic winter, featuring cold currents in December and February but mild throughout the month of January. Because of the abundant rainfall of winter 2018 together with one of the wettest springs of the last thirty years, we were able to prevent any type of drought.


After a rather complicated spring, thanks to the mild temperatures and the generous rainfall, plants managed to start a rigorous budding regardless of their early start. Temperatures then slowly started to align and so on June 10th our summer began. Summer 2018, characterized by a mild climate with normal temperatures and scattered rains, allowed for regular veraison starting from the second half of July.


The month of September near the harvest showed an excellent temperature excursion, with sunny days and cool nights, thanks to which we were able to achieve a perfect phenolic and aromatic ripening of our grapes.

The 2018 vintage, as a whole, was characterized by creating wines of great elegance and finesse, we are satisfied with the grapes we harvested at Il Caggio both from the point of view of structure and aromatic qualities.

"Already a wonderfully open nose, intense fruit, similar to the 2015 shows plum aromas and many red berries, floral notes, blossom tea, including a fascinating, stony minerality. In the beginning the wine is creamy, round, fruity and strong, no oak influence is perceptible, of course still youthful, initially a bit wilder than the older vintages, but already a grandiose drinking experience, because every element is here in its place: perfectly ripe, fine-grained Tannin, good acidity, which packs 14% alcohol wonderfully and with excellent length and red fruit aromas on the finish. “Hitting the market now, the Caggio 2018 Chianti Classico Gran Selezione Ipsus unfolds slowly in the glass to reveal dark fruit, cassis, spice, cured leather and pressed blue flowers. There is a touch of something exotic like a bay leaf or a hint of toasted cumin. The finish is silky and very smooth, and this wine is longer in terms of mouthfeel and more finely polished compared to the 2016 vintage that I tasted at the same time.”

2018 saw the introduction of ceramic vessels in the winery, along with the addition of another large cask. The 16 micro-vinifications this year took place completely in stainless steel using wild yeasts, then matured for 22 months in tonneaux (80% new) and 15hl barrels. It then spent eight months in ceramic (rather than the cement used in previous vintages) before bottling. This 2018 brilliantly combines the darker fruit of 2016 with the mega-freshness of 2015, finishing it off with super-fine tannins. Creamy, earthy and chocolatey notes are lifted by a balsamic waft, overlaid with ripe, sapid red and black cherries, a touch of black tea and a long, sweet, pure cherry and wild strawberry finish. Superb.

“Very perfumed with roses and other flowers. Spanish cedar, too. Medium-bodied with creamy and fine yet round tannins that go on for minutes. Super-fine texture. Juicy fruit. Succulent and so beautiful. Hard not to drink now. In fact, do. But it will age beautifully, too. Vineyards of 30 years or more. Drink or hold.”

Chianti Classico

This small wine-region produces perhaps some of the best-known and appreciated wines from Tuscany. Wine has been produced in this area for over 2000 years, since Etruscan time. This Tuscan region was named Chianti and recognized as a wine-region since 13th century. In 1716 Cosimo III, Grand Duke of Tuscany, officially delimited the Chianti production zone: an area lying between the cities of Florence and Siena where the homonymous wine was produced and was already enjoying great success. At that time the wine called “Chianti” was made in the territory called “Chianti”. The trademark always found on bottles of Chianti Classico is the Black rooster, historic symbol of the Chianti Military League and among other things depicted by famous artist Giorgio Vasari on the ceiling of the Salone dei Cinquecento at Palazzo Vecchio in Florence.

The Chianti Classico appellation covers an area of approximate 260 km2 (about 100 square miles) between the city of Florence to the north and Siena to the south. The four communes of Castellina in Chianti, Gaiole in Chianti, Greve in Chianti and Radda in Chianti are located entirely within the boundaries of the Classico area with parts of Barberino Val d'Elsa, San Casciano in Val di Pesa and Tavarnelle Val di Pesa in the province of Florence as well as Castelnuovo Berardenga and Poggibonsi in the province of Siena included within the permitted boundaries of Chianti Classico. The soil and geography of this subregion can be quite varied, with altitudes ranging from 250 to 610 m (820 to 2,000 feet), and rolling hills producing differing macroclimates. There are two main soil types in the area: a weathered sandstone known as alberese and a bluish-gray chalky marlstone known as galestro

There are three tiers within the Chianti Classico appellation: Annata, Riserva and Gran Selezione. Chianti Classico Annata requires a minimumum of 10 months of ageing in wood and bottle before release. Riserva wines must be aged for 24 months before commercial release. A Chianti Classico Gran Selezione must be made from a single estate and have been aged for a full 30 months.
