IPSUS is born from the perfect combination of a land ideal for growing Sangiovese vines and the passion of a noble family dedicated to the art of winemaking since 1435. IPSUS has a distinguished power which represents its own unique terroir, Il Caggio. Fine and silky tannins are combined with red berries, cherries and the aromas of blood orange peel. Touches of violet, roses and lavender are seasoned with delicate spices and crushed stones. IPSUS, with its tightly-wound texture and long, savoury finish, is an electrifying wine.

The Caggio 2016 Chianti Classico Gran Selezione Ipsus is a lovely expression of Sangiovese. The wine captures the slightly wild and untamed side of the grape that is so compelling, but it also focuses on elegance and nuance. On first nose, the bouquet reveals plenty of forest berry and wild cherry, but as you come back to the glass for a second and third try, you might notice more determined notes of crushed stone and granite. The wine is lean and streamlined with pretty floral embellishments over a long and silky finish. More than anything, Ipsus captures the purity and honesty of Sangiovese over a delicately polished and lean mouthfeel.

2016 was a later harvest, with picking interspersed with rain showers. 18 micro-vinifications took place in 25% new tonneaux and 75% stainless steel tanks, using wild yeast for the first time (the 2015 was inoculated). It was also the first year of using large barrels as the team sought to reduce overt oakiness in the wine, and so the 2016 was matured for 24 months in new tonneaux and one large 15hl barrel, followed by five months in cement before bottling. It has a darker profile with more black cherry character compared to 2015, grippier, more powerful and silky in the mouth. It has great freshness, showing plenty of balsamic influence and raspberry acidity, finishing with flourishes of wood, herbs, spice and earthiness. 3,600 bottles produced. 2023-2040.

Tuscany

One of Italy’s most preferred regions by wine connoisseurs, the region of Tuscany is probably only rivalled for its prestige by Piedmont, in the north. Tuscany contains a number of very fine DOC and DOCG appellations within its geographical borders, and is also home to the Super Tuscans. By far the most relevant Tuscan appellation is Chianti Classico, where some incredible wines that compete at the highest level are produced. Many of these amazing Chiantis will age for over twenty years. Chianti shares Tuscany with Brunello di Montalcino DOCG and Vino Nobile di Montepulciano DOCG, both of which produce wines of great quality. Brunello is a local variety of the Sangiovese grape. The warm temperatures coming off the coast, combined with the cool breezes from the hills, create a multitude of microclimates.

Tuscany accounts for over thirty DOC and half a dozen of DOCG wines. In addition to the great, well-known and appreciated reds, the local production includes a few distinguishable whites, the most notable among them being, without doubt, the Vernaccia di San Gimignano. Other delicious whites include the Bianco d'Elba, Bianco di Bolgheri, Vermentino and Bianco di Pitigliano.

Grape varieties

One of the most well known is Sangiovese the mainstay in all but one of Tuscany's seven red-wine DOCGs. In Montalcino it goes by the name Brunello, hence the name Brunello di Montalcino; in Vino Nobile di Montepulciano it is locally known as Prugnolo Gentile. Chianti, famed the world over, also features Sangiovese, as well as permitting the addition of small amounts of Canaiolo and Colorino, and international gems Cabernet Sauvignon and Merlot. As well as being famed for its reds, Tuscany produces some distinguished whites, one of which has achieved DOCG status: Vernaccia di San Gimignano.
