Owned by Antinori, Castillo della Sala makes wines which are characterised by ‘structure and sophistication’, as stated in Robert Parker’s Wine Advocate. The vineyards are on soils rich in fossil deposits with veins of clay that give the wines minerality and elegance.

Cervaro della Sala was one of the first Italian white wines to be aged in barriques. Fermented in oak, no malolactic fermentation takes place. Crisp and linear with salty mineral tones, lots of stone fruit and notes of vanilla. This is a fantastic Chardonnay blend with 10% of Grechetto to add vibrancy which gives Burgundies a run for their money.
